Greek Lemon Chicken With Potatoes Recipe
Savory chicken with oregano cooks in a flavorful lemon oli marinade alongside tender roasted potatoes. A perfect dish to prepare for a Sunday night dinner that the whole family will enjoy.
Ingredients
1 (3-4 pound) whole chicken, cut into pieces
1/2 cup olive oil
2 tablespoons canola or corn oil
Juice of 2 lemons
2-3 tablespoons dried Greek oregano
1 tablespoon garlic powder
3 tablespoons Worcestershire sauce
salt and pepper to taste
5-6 potatoes, peeled and cut into wedges
Paprika to sprinkle over potatoes
1/2 cup water
How to Make Roasted Chicken & Potatoes
Preheat oven to 350 degrees.
In a medium bowl, whisk oils, lemon juice, oregano, garlic powder and Worcestershire sauce.
Dip each piece of chicken into mixture, coating well. Transfer into a large roasting pan, season chicken with salt and pepper.
Toss potatoes in remaining oil mixture; add to roasting pan around chicken.
Season potatoes with salt, pepper and paprika, to taste. Add TA cup water to the bottom of the pan.
Bake uncovered 60-70 minutes or until chicken and potatoes are done.
Baste chicken and potatoes several times during the roasting process. Broil last 5 minutes to crisp chicken and potatoes.
